I made a lime and cilantro sour cream dipping sauce to go with them. Labor intensive meal but so worth it

I’ve never froze them but I imagine they would be fine! They are super simple! You can stuff them with just about anything. I’m a sucker for this Cuban style beef for them but you could really do anything. I cheat and use pie crust,( fyi crescent rolls do not work lol) brush them with a basic egg wash so they get nice and golden and to help them seal. Throw them in the oven and voila! I’m sorry clay baker, I don’t actually speak Spanish 😬

my new love. my sister in law is dating a Mexican guy. damn that man can cook!!!! I have fallen in love with his empanadas especially!!!! he puts yellow rice, hamburger spices, and corn in his. makes the crust too. Very yummy!
