Good Morning, Friends - So, yesterday was a surplus calorie day. For those who do not know, I store cals I don't use in a caloric bank account. About once every 2 weeks or so I have what I refer to as a surplus calorie day so that my body has a chance to take in some of the cals we didn't get an opportunity to use due to my level of fitness activity.

Just a side note: After the 70.3 (half ironman triathlon) last August 2023, I wanted to retain at least 65-70% of that conditioning. As I explained to FS member Asarver (who is currently training for her own 70.3), the half ironman alone will leave a body in the best conditioning of its life.

There's no way to keep that level of conditioning unless one does triathlon for a living. But, there's no going back to "normal fitness" after that kind of year of activity even at 50 years of age.

It would be like opting to "lose" muscle mass on purpose. I mean, who does that? So, my fitness level is well above what it used to be before the Olympic triathlon, 128 mile cycling ride, and the 70.3 :-)

Anyhow, yesterdays surplus was homemade Pizza!!! Yay! Otherwise known as "heart attack" pizza. Because the last time we made it, my mother did indeed have a heart attack and the paramedics were called. No worried, it was very mild and her particular heart attack had nothing to do with her diet or lifestyle, or the pizza! She's a very healthy lady actually. They're looking at a multitude of factors, and one of them is hypercalcemia.

The pizza was delish. As usual, I ate the whole thing :-) Tummy feels good this a.m and glycogen stores are replenished. My long cycle session will feel "smooth like butta" today, hopefully.

Well, I like the toppings I can see (vision you know) I certainly like a good veggie pizza 🍕😋!

Oh, she had meat on her...but, it is hard to tell. Actually, she was fully loaded with sausage, pepperoni, bacon bits, anchovies, artichoke hearts, greek olives, mozzarella cheese, and pineapple. The crust has cheese in it as well. She went down nicely :-)

I like a good supreme but I prefer salami in place of the pepperoni in most cases I feel that it has a deeper more complex flavor and I like how chewy it is. Surprising right as much as I like veggies? Also really like the fire baked look of your pizza. I once had a pizza cooked in an old cathedral restaurant in Lexington that was super good they had the stone oven that they would bake the pizzas in it was a couple decades ago so pardon me if I didn't get all the details correct but it was so cool. Technically it was one of those non pizzas 🍕 I enjoy so much had a garlic butter sauce and five cheese blend on top and something green parsley maybe 🤔 so tasty I loved it! Had to say I'm not much of a cheese pizza person but it was probably one of the best pizzas I've ever had.

Dang, That sounds delicious! I confess, I'm not really that particular about what is on the pizza and I am infamous for throwing EVERYTHING that's laid out on the counter on it (kitchen utensils aside). Oh, and yes I keep forgetting to mention we grilled it! When I posted, I kept thinking you have to let folks know you grilled it on the weber or they'll think you burned it! Haha Anyway, it's grilled so the burn marks are meant to be there. I will say, Mom rolled the dough thin on the crust and I think I prefer a thicker crust. But, that's okay it didn't impact the taste.

Please tell me how you made the crust. Someone gifted me a pizza oven recently and my first thought was to figure out the crust before throwing toppings on. I don’t really like how they are coming out….either I am not letting it rise long enough or the humidity is so high it’s impacting the dough making process.

I'm going to let my mother respond to the rest of this because she is the expert bread and pizza dough maker in our family: Here's her response - Hi honeebuns. King Arthur provides great tips, recipes and sells "00" flour for making pizza dough. This link should give you access to recipes specifically for pizza ovens. You can click on the Recipes link at the top or use the search option. I've made their Neopolitan crust and it's quite good. Also they have a bread "ambassador", Martin Phillips, who has videos on YouTube on how to make, shape and grill pizza. I believe there's one just for pizza ovens. Hope this helps - Mom.

Awesome pizza Eguill 🍕🍕👍👍 My long-deceased dad had a heart-attack after after eating a double-cheese and pepperoni pizza (NJ Style) from his favorite pizzeria. For years he talked about how good it was and how it was “almost worth it“. The call of pizza is strong in my family 💪💪

@Sk - I read your comment to my Mom and we both had a genuinely hearty laugh. Especially, the part where you quoted your father as saying, "It was almost worth it..." That might become a mantra after we have our splurge days. She's taking this cardio class 2X/week. I guess it's a prerequisite after patients have a heart attack. Her stats are so good, the teachers actually told her it was optional in her case. But, she really enjoys it and I think it's good for her to get out and just be around people. Plus, she's learning a lot about the heart and then of course I get to learn it, too :-)

Honestly I didn't think you burned it at all I just figured you had one of those fancy oven stones or an oven like honeybuns personally I find the little burn specs on top quite attractive. When I make pizzas at the store I always hold them a little bit closer to the oven top before I pull them out a few seconds early because it puts little brown specks on the cheese and people love that for some reason they find it very attractive and appealing. If you wonder why I pulled them a few seconds early 7-Eleven when they took over the company a couple years ago the first thing they did was fire all of the test chiefs' for our food products so now the ovens don't cook at the appropriate temperatures or lengths of time so it's more of an art form than it used to be so I find that the pizzas are overdone if you go to the pre program length of time they look dry and old and my customers do not appreciate that. And my customers do not appreciate that.
