Okay, on the 1st I did slip from my diet by having an egg mcmuffin with only half the English Muffin. Not that bad a slip but how do you explain 6 lbs added in 3 days??? That was my only slip and I was still not over on carbs or calories.

Could it be water weight? Hope it is down soon!

My hubby recently gained 3 pounds even though he's been following his eating plan. The only thing we were doing different was a LOT of physical activity over the span of a few days. Sometimes I just can't figure out why things happen the way they do... Just keep on it and you'll get right back on track.

Salt. You're probably retaining water. On my sausage mcmuffin with egg Sundays I make sure the rest of the day is low sodium. Doesn't always happen so I compensate the next day.

I am pretty sure it was salt! I have already dropped 4.2 pounds of it. I had been eating a lot of salt lately, the Egg mcmuffin (sausage) and ham later

Glad that most of it disappeared and that you're sticking to your diet fairly well. Keep up the good work.

Hootie, I skipped through various dates on your food calendar. Where are your veggies? You are eating foods with tons of salt and processed stuff. Your body needs the nutrients in vegetables as well. Some days your sodium was over 4000 it should average no more than 2500. Veggies are on low carb plans, lots of them if you are following it correctly.

That's interesting about the sodium, I will have to remember 200 - great info Wholefoodnut -I know I had days 5000-7000 on sodium! VERY INTEResting!!!!!-I been keeping my cholesterol under 200 to get it lowered

I meant 2500 on sodium !!!!! Autocorrect strikes again!!!!

hate that auto correct sometimes

wow, thanks for correcting me wholefoodnut!!! I will start adding some veggies!!and use the 2500 as a new goal. In defense sometime I will actually not be eating processed foods as much as my diary says, for example I make from scratch but will use a commercial brand rather than try to break down my own recipe. for example, I make my home made chorizo, chicken salad, mayonnaise etc.

I do that also sometimes instead of putting in the recipe in the cookbook. Sometimes I have to substitute similar ingredients as they aren't available as I delve into many cuisines. Commercial products also have in general a lot more sodium that homemade so substituting will really throw your sodium level off. Just was seeing almost no veggies and looked like lots of processed. I generally eat little meat so the lack of veggies really stood out. I know my sodium now runs low (blood work indicated) as does my glucose so I have to be careful to get enough, since I eat almost no processed foods. Doc has me adding salt due to it being too low earlier in the year, almost into the danger zone. I can tell when my glucose drops too low. Sausage is an occasional treat for me. You make chorizo! Cool, I buy it now and then from a Mexican market that makes their own. I've watched them make it and have checked with them on the ingredients. I also buy sausages from 2 stores where they make their own and I know what goes into them, I know one of the butchers at one of them and have been back in his cutting room while he made some Italian sausage one day. For just me making sausage is a lot of work. Sounded like you were doing low carb. Check the Adkins site and you will find a list. Or just google low carb veggies.

I make all my own sausage. There was a time if I wanted a cheese sandwich I would start by milking the goat. lol That is not an option for me now that I live in the city. Hoping to get back to country come December.

Laughing, I used to have goats. Also used to live in the country now in the city. I miss the country but this works better with my job, I do have a park behind my house so that is a plus. I visit my kids in the country. I only tried milking mama goat a couple times, she wasn't very co=operative. LOL. She was pregnant when I bought her with 2 female kids in addition. Then they were all but one killed by coyotes. The survivor was the smallest and fit through the fence in with the horses. We bought the goats for my girls and also they ate the weeds in the fields that the horses didn't eat. Daisy the remaining goat bonded to the horses and would go riding with us but she didn't like people very much. Quite a parade, horses, 3 dogs, and a goat. LOL Back then much of our milk I bought from a friend who owned a dairy farm. Skimmed the fat off the top--yummy cream. Meat was bought from friends a whole animal and frozen, always a supply of venison, pheasant, and quail. Eggs from friends who had chickens; My chickens were also killed by coyotes. I would have chickens here but there are foxes who live behind my house. I'm afraid they would not survive. Every spring I think about getting some layers.

We have a lot in common (except for the coyotes) Our farm was in upstate NY. We raised most all our food, raised our pork and chicken, bought beef from neighbor. Had a large garden which meant a lot of canning, pickling and freezing. Made my own ketchup, maple syrup, and we also had apple, cherry and a pear tree, lots of blackberries, currants, mint, I used to make small jars of currant jelly and mint jelly which I would put with home made Italian bread for Christmas gifts. Made all my own syrup from the various fruits we had, instead of using pectin I would use apples when I made jam or jelly. Everything was organic. All my cooking was done on an antique wood stove. Smoked my own bacon and cured my own ham.

OH my goodness an antique wood stove!! we would have melted!! Mine was a 1940's propane one LOL. Not too many coyotes in NY, we have lots of them though mostly in the country. We didn't have the fruit trees except a couple old apple trees I was slowly bring back to produce decent apples. We only had 5 acres so most of 1 acre was garden. Our animals were the horses, goats, dogs and cats except for my foray into chickens one year. I did tons of canning and freezing also organic, but now just me so I really don't do much of that. I do have a nice pressure canner and a smallish freezer. I have a thicket of raspberry bushes that look like they will produce a bunch this year, some of them will be frozen. I plant a small garden both veggies and herbs. My soil is awful so have 3 4x8 raised beds, I want to add another this year for asparagus. 2 goji bushes are going in today.

Yum! While living in the city I was used to goat milk yogurt from Union Square Farmer's Market. Hated when I moved to La. and I couldn't get real good yogurt . I started making my own, recently made kefir cheese. Hearing you make sausage, I am trying next. Watched a vid on YouTube this week, doesn't look too hard. No casing on mine though. I balloon 4-8 lbs as soon as I have too much sodium. Normal days try and stay at 1500 or less. Thanks for sharing.

We also raised Appaloosa's. NY may not have coyotes but we did have coydogs, today they are called coywolves and they were pretty bad, we also had Canadian Lynx and bear. I do not put casings on my sausage, prefer bulk, especially italian as I like to mix it into different recipes. It is not difficult at all if you have a good meat grinder. A few years ago we live in a spot where I had room for an herb garden, I tried growing tomatoes but the cooked on the vine before I could pick them. Now I am in a 5th floor apartment, no spot for a garden

We had 2 appy's Mama and son. Coywolvess sound scary a hy-bred between coyote and wolf, yikes! We had bear in New Jersey when I lived there as a kid. No bear here in northern Missouri but we do have puma's. I have a pair of beautiful red foxes behind my house, deer and wild turkey all herein the city. Where are you that tomatoes are cooking on the vine? I have a little house with a nice small but fenced yard that backs onto a park in a fairly quiet little neighborhood. It is a former camping area for the start of the 3 major trails West and Truman's Presidential Library is in the park that is behind my house.

We also had fox, turkey, woodchuck, weasel, deer, puma (although I never saw one) bobcat, all kinds of wild critters. I also enjoyed eating day lily root, polk salad, cat tails (delicious) never had the courage to do any mushrooming though.
