Making 4 dozen tamales for a pot luck picnic this afternoon. Half are traditional pork in guajillo, ancho, and pasilla salsa with a half dozen chiles de arbol tossed in to turn up the heat. The other half are vegetarian made with diced pickled nopales and jalapenos. Made a test batch of 6 to see if I had a clue as to what I was doing.

Tried out 4 on Ms Gastropod for after church lunch garnished with crema, salsas and queso cotija. She pronounced them good but found the vegetarian option a bit spicy. Que lastima! Make it, log it, eat it.
