I started eating more meat and eggs as I am no longer buying produce for meal prep. Noticing that I'm not missing the veggies like I thought I would. I have been having hot breakfasts of 2 eggs, butter, and 5-6 oz any kind of meat keeps me full until about 3 pm. Some simple egg, ham, or fish salad or hamburger patty with cheese lasts me until supper. I think I'm almost ready to do the BBBE challenge since I haven't had any digestive issues with increasing the protein. Yeah!

I've been adding more protein to my meals . Just about finished eating up the last of the fruits & veggies from the fridge. I also went through the pantry and will be making a donation to the local food bank. I've also been getting some more recipe ideas from YouTube for carnivore meal prep. This seems to get us all excited ! We learned we can make our own ground chicken in a food processor too. Our local Sam's Club carries beef bacon. I'm excited to try that as well.

End of the school year this week for my children. My eldest is working on her safety classes to be a lifeguard this year. How exciting! Youngest gets broody as she loves to learn and interact with the teachers so much. However, she'll be transitioning to HS and is excited about taking weight training this summer! I got some new walking shoes for the summer so I'm excited about that as well. I think I'm going to start a 30 day elimination diet and see how it goes. I saw this amazing video up on Dr. Berry's YouTube channel about Amanda. She has a blog about her health journey called https://www.carnivorousme.com.
I have noticed that eating corn or processed bread, pasta, etc. makes me have a stuffy nose for several days and have swelling in my feet. Along with an overall feeling of being off for several days, I lose some of my all-day energy. Eating low carb/keto recipes has really helped. I feel the best when I have less than 50 g carbs/day. My doctor has wanted me to try and eat more protein so I'm going to try the carnivore diet and see how it goes. I figure eliminating everything except meat will help. I also came across Maria Emmerich's website, https://mariamindbodyhealth.com , that has lots of information about the science between ketogenic and carnivore lifestyles as well as recipe resources. Both my teen daughters want to try it too after seeing some of the recipe videos:) I'm looking forward to a challenge!
