Beautiful fall-like morning. Been enjoying this nice run of sunshine, I really needed it. I so hope this fall will be a sunny one. Let us get our rainy season in winter if we must. Actually except for a dry few weeks we did have quite a rainy spring seems like, so maybe fall will be a beautiful arid one painted with fiery hues and stacks of pumpkins and golden cornstalks beneath brilliant blue skies. Wouldnt that be wonderful. I want to go apple picking. I think next month I will.
Oh! I started a gallon of scuppernong (muscadine) wine! Been years since Ive made wine and I had forgotten how much fun it is to watch those fruits and yeasts come to life! I threw in a handfull of raisins, a few dried rosebuds, and a jasmine green tea bag. This should be a beautiful sweet-ish blush wine. I'll savor it after dinner one cold November night.
Ok, Im off to work on remodeling this temporal housing I call my body, lol.

I used to ferment wine in 5 gallon batches. I was decent at it, that was 25-30 years ago when I drank more than I do today. I usually made varieties of red, my white was a complete failure, undrinkable. Best aged to mellow the flavors, good luck with the project. Have a great day!

Love this project. I have grapes, but I never know what to do with so many all at once. Then, the birds take advantage of my hesitation and there is no longer a decision to be made. Would love to see some pics as you go.

Catfish, thanks! I actually back in the day had bought a 5 gal carboy, but never progressed passed single gallon batches. I agree, the longer it ages the more mellow and refined the flavors. Ive let some go as long as 6 months, but usually I get too curious how it turned out and crack it open! I think single gal batches work best for me. Hope youre having a great Friday!

Thanks, Kat. You should definitely try a batch, it really isnt hard. Lots of good instructions and recipes to go by. Ive been guilty of letting them go to the birds as well, but this year I got to them! I snapped a pic of the 'must' and it really wont change much til it gets strained and put into the jug with an airlock to ferment. I'll snap pics along the way and post some.

I made it up to 4 years of aging with a few bottles. I had trouble coming up with bottles for all my 5 gallon batches I had going so I used 1/2 and 1 gallon jugs, corked and sealed with wax. That was back in the day when I drank a bit much (college through mid 20s) and the hangover from my homemade wine was awful. I would love to try making it in gallon batches today and having a glass once in a while. I never had homegrown fruit in any quantity so all my supplies came from mail order shops, including the concentrates. There is quite a supply of ingredients online today. I'd love to see pictures of your process and results too.

I like winter to be dry. Prefer no snow. I'm okay with rain in the other seasons as long as it is not constant. I love long Falls and long spring. Brief winters. Mild summers.

4 years is fantastic, Catfish! Sounds like you have made quite a bit of wine in your day! Im just a novice and not very experienced at all. I never did make a 5 gallon batch, but the gallons I made all came out very well I thought. I cant say I remember how the hangover was from the homemade. I wonder, do you use all the fancy add-ins? I really do a very basic process of fruit/sugar/yeast/spring water and add in a few raisins for body, and a tea bag for the tannins. And that's basically it. Ive never attempted white wine, but I have attempted mead and really want to do another batch of it this fall! (The first one I goofed and left the orange rinds on too long for my taste and it was bitter). I will post pics, but Id love to hear your process and experiences!!!

Morticia, Im with you on brief winters! It seems like winter lasts 6 months and the other 3 get squished into the other 6! I dont mind rain, I like a cozy rainy day in any season, but its the non-stop rain for weeks on end that get me down. We're going to have us a perfect fall and winter this year, Morticia!
