1/30, 8:28am - WOW! I can’t believe the first month of the year is almost over. Since 1/1, I have lost at least 9 pounds. (I’ll be sure to weigh on February 1st, so I will know my exact 1-month total loss.) But, I’m already impressed (and very pleased) with what God has allowed me to do so far! I’m learning about fiber, finding and implementing ways to get more of it into my diet (and am seeing good results after just the first day). I’m reducing even what I CAN have in Net Carbs from 30g to closer to 20g per day, instead of just keeping eating until I’ve squeezed in every last Net carb I can fit. I’m searching out and creating new recipes that give me exact counts of nutritional information by entering them into the FS Recipe Calculator - and have learned to do that BEFORE I eat what I have made. I’m even remembering (most of the time) to take pictures of the food before shoveling it down (uh, I mean, before thoroughly chewing, eating slowly and savoring the flavors of the food)! I’ve avoided soda for almost a whole month and have drunk ONLY water (and an occasional cup of Earl Grey Tea with a little Cream & Stevia, when it’s especially cold in the house) – in spite of the MANY temptations I’ve had to drive through Taco Bell or McDonald’s and grab an ice cold cup of my “addiction of choice” - Diet Coke! I have resisted the temptation to just GUESS at my food quantities, choosing rather to weigh ingredients when I’m not sure exactly how much a “serving” is (i.e., lettuce, tomatoes, etc.) I’m adding more HEALTHY fats to my diet by eating avocados, cut in half with just sea salt on them (which I would never have thought to do on my own!) and by using real butter and coconut, olive or avocado oils to replace vegetable or canola oils.

I’m moving more, becoming more active, and expending more calories in “Activities & Exercise.” A friend once told me that she wasn’t into “just” exercising. She said (something like), “If I am going to work up a sweat, I want it to be by accomplishing something – like cleaning my house, or gardening, or playing outside with my kids – not by just jumping up and down, or walking on a belt that doesn’t take me anywhere.” (Shout out to Kelli Lieder!) Since I have so many things around the house that NEED to be done anyway, and since I HATE to exercise (particularly if it involves sweating), I’ve been adopting her philosophy, and it gives me a double benefit.

Today, my goals are to keep Dietary Fiber at or above 20 grams, keep Net Carbs to less than 22 grams, and to spend at least 6 hours in some kind of Activity or Exercise. Here’s to a great day for EACH of us!
