THIS WAS ACTUALLY JANUARY 12TH. Got up at 5am and had a CarbMaster Yogurt (5 carbs) with 1 oz. of Pecans. Didn't realize until afterward that the Pecans were: Per 1 oz - Calories: 196kcal | Fat: 20.40g | Carbs: 3.93g | Protein: 2.60g. I don't mind any of the calories or fat, but I was suprised that it added almost FOUR carbs. Oh, I should have checked the package to see if there was any fiber that could change the NET Carbs!

At 9am, I made an Inside-Out Chicken & Cheese sandwich (because the 16 carbs will be too much once I start the new challenge on Monday).

THEN, I got my tooth extracted at noon, and my mouth just UN-numbed (4pm). I'm having my husband cut the rest of the meat off the Rotisserie Chicken, make some gravy, and pick up some Country Crock mashed potatoes. I’m going to put it all in the food processor so it won’t have to be chewed. After this gaping hole stops bleeding, I should be able to go back to “normal” eating. I am still planning to go out for ONE higher-carb meal before the LCHF Challenge starts in 3 days. I am thinking about Fried Calamari and Breadsticks at Olive Garden. OR, fried seafood and baked potato at Red Lobster. It’ll be three months before I get another high-carb meal, so I want to get in something really good before I get super serious!
