really simple: preheat oven to 325 - spray pan with oil and set aside 9 oz sugar free chocolate chips melted and slightly cooled 3 eggs separated Whip the egg whites with an electric mixer until stiff peaks form and set aside. Mix egg yolks one at a time with the cooled chocolate until incorporated and glossy. If it appears dry I add a tiny amount of coconut oil. Gently fold in 1/3 of the egg whites - do not over mix. Fold in the second 1/3rd and then the final 1/3rd. Once completely incorporated, pour the mix into the pan and bake for 20 minutes. The tops should look a little glossy but set in the middle. My non-lc eaters loved this too!  

I got 9 decent sized cupcakes out of this recipe. They do tend to dry out quickly if not covered. Microwaving them for 10 sec solves that though. Butter on top doesn't hurt either!  

Wait, what?? No coconut flour or almond flour? Wow. This sounds super easy! I've been looking for something like this for my granddaughter!! Thank you @Happy*Snappy! Chocolate chips and eggs. Can't get much simpler than that!! ❤️❤️
