I have not been logging for a while but did not fall off the wagon. Happy to see that even without the control factor I lost a pound.
A lot to do and even now I should not be here but I am taking my time. This is for me and it is important.
My daughter and granddaughter came over from Germany and are staying with my other daughter and her family until next week. Then they will stay with me for a week. I am so exited to have them here. But then... an almost two year old in the house, it is not prepared for it (yet). I am soo much looking forward to it.

Here is a question. My daughter bakes a keto bread with potato fiber. Has anyone ever seen anything like that in the US? I googled but nothing but dog food came up (yikes). Has anyone ever tried to bake with Hemp fiber?
I have a recipe for an almond bread but it is kind of dense. And the oopsi stuff is a little bit rubbery so I wanted to give this a try.
Suggestions?

Resistant potato starch is okay for keto if you don't add grains to the bread. I've tried every grain free bread recipe out there and none of them even come close to real wheaty, yeast bread. I was a baker before retiring and even I can't make a good grain free bread.

Thanks for the suggestion. I do have the potato starch at home but so far I has hesitant to use it. Funny thing is, if it would be added to the potato fiber we have a potato again *lol*. My daughter has not been here yet so I have not tried her bread. Next week. In the meantime I ordered hemp fiber and will give it a try with it as well. Good way to compare.

We just can't accept life without bread? It's not on the counter anymore and there's no butter in the house so I guess I finally kicked that addiction.
