New super easy favorite meal. Finally discovered how to make tofu crispy! And it's not even fried, it's baked. Yay! Also regular bok choy which is not quite as good and tinder as baby bok choy, but I shopped at Publix today, and that's all they had. And why did I go to Publix for the first time ever? Because they're the only store close to me that carries halo top ice cream (that I've been dying to try) so I got me a pint of peanut butter cup ice cream there... 320 calories in the whole pint, plenty of protein, and sweetened with organic stevia... Can't wait to try it.

I love Publix and I brought my first Halo Top there yesterday. I did take 1 spoonful to try and yummy! I don't buy my bok choy there though, oriental market for that. It's the only place I've found the baby bok choy.

You are soooo lucky! My Publix only has vanilla and chocolate. The other Publix at least had mint chocolate chip last week. I would love to try the peanut butter. I'll be eating some Halo tomorrow. :-)

I got the vanilla, they ran out of mint chip at mine. They had a few other other flavors as well but carb count... I may indulge tomorrow.

My town has Ingles (I'm in the south, there's 3 ingles within like 5 miles of me), trader Joe's, Harris teeter, earthfare, fresh market, whole foods, publix, plus local places plus super Wal-Mart. but all that carries halo is publix and whole foods, and whole foods is way away for me.

Also the peanut butter cup was amazing. I'd only had about 1200kcal yesterday, and ended up eating the whole pint :P

That's my weekend plan. Skip ice cream all week and eat a whole pint over the weekend. I'm going to eat it with the yummy whipped cream I made last weekend. Keto ROCKS!!!!

@2ManyCurves press the moisture out of the tofu for 20-30 minutes then mix it with 1T of oil and 2T of soy sauce (for a whole block) then coat it in about 1T of corn starch. bake at I wanna say 350 for 20 minutes. it's magic. so crispy you'd think it's fried
