Last weeks Christmas party was sponsored by my job. This morning a list was being passed around that landed at my desk and at the top of it said "Christmas Potluck 12/23/16". Everyone was so disappointed in the Christmas dinner from Cracker Barrel last week they decided that they can do something better. First thing on the list was Rosa's Rolled Enchiladas. I've been at my job for over 5 years and throughout the year Rosa makes fresh tortillas (among other things) and i've had a few dozen. The first thing I thought was "Make sure you call in that day" Going down the list non of those options were keto friendly. There were many dips, pasta dishes, cakes, sodas etc. I've been trying to think of something keto friendly that I can do for a potluck that everyone would enjoy. Of course anyone who i let try my lunch before of cabbage and pork chops wants that. I usually bbq pork loins and shred cabbage and thats just for 1 person, me. Theres over 100 people in my specific department....again do my friends not know how precious my fats are? Ill bring plates and napkins for the potluck. 0 cal, 0 carbs. Win, win.
