Thanks guys! @Carmon, I always try to find substitutes so that I'm content with my way of eating. How else can one make it a lifestyle change? Recipe hunting is more important than exercise on my WOE. 😉 @Lady, they sell cauliflower rice crumbles at my local Walmart, or you can crumbles regular cauliflower with a food processor. There are all sorts of recipes you can make with it. @Warren... CATCH! 😜 @trackin... they are wonderful! @Engeland... Easy! * preheat oven 400 * lightly grease cookie sheet * 5 tbs Soft butter (not melted) * 4 eggs * 1/3 cup coconut flour * 1/2 tsp baking powder (I use aluminium free, with non gmo corn starch) * dash of salt (if your butter is unsalted) * Mix everything together well with electric mixer (about 1 minute) * Spoon 8 dollops on cookie sheet * pat down with spoon until about 1/2 thick * bake 12-15 minutes until tops are light brown About 20 minutes total time & about 1 net Carb each

I had to search up recipes when I saw your biscuit picture an hour or so ago. Thanks for posting the recipe, this is exactly the same as one I found in my search and am hoping to try. They look wonderful!

I'm trying to find more recipes using coconut flour since the carb count is lower than the almond flour. These look delish. thanks for the recipe. Coconut flour absorbs liquids so much more than almond flour, too. Dang, I have a meeting in and hour so will have to wait until I get home to try them. I'm trying not to use the oven because we will be up in the 100's today. ... Just love the Az desert in the Summertime... (not).

Thanks, guys! You're welcome. I love them! @Engeland... I'm really not sure. I opt for coconut flour because of the phytates and tannins found in nuts. Apparently, I can't tolerate them even in small amounts. @dboza... right. I try not to use the oven in the summer either, but I will make an exception for these babies...lol.
