We used to make that. It's pretty forgiving, but it does stink up the house a little when it's fermenting. Not terrible, though, and well worth it in the end. Hope it turns out well!

Thanks, Morticia and writingwyo! I’m a bit afraid that my old house, however clean I try to keep it, is a bit too funky for clean and easy ferments. The only other time I tried to ferment something—milk to make kefir—it was a disaster. But it’s good to know that kimchi is forgiving. Hope it works!

From what I understand, kefir is a bit more finicky. I think you'll do fine. 😊 When we were making kimchi, our home wasn't exactly from the pages of Home & Gardens 🤣
