Made a big batch of healthy banana muffins with my daughter. They turned out very tasty! My yield was 30 muffins. I posted the recipe below. I used 5 bananas and a touch of avocado oil spray.

Healthy Banana Protein Muffins Ingredients: • 4-5 ripe bananas, mashed • 2 scoops vanilla collagen powder • 1 cup fat-free Greek yogurt • 1/2 cup coconut sugar (or a mix of coconut sugar and coconut brown sugar) • 2 large eggs • 1 1/2 cups oat flour (you can blend oats to make your own) • 1/2 cup whole wheat flour • 1 teaspoon baking soda • 1 teaspoon baking powder • 1/2 teaspoon salt • 1 teaspoon vanilla extract • Optional: 1/2 teaspoon cinnamon Instructions: 1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it. 2. In a large bowl, mash the ripe bananas until smooth. 3. Add the Greek yogurt, eggs, vanilla extract, and coconut sugar to the mashed bananas. Mix until well combined. 4. In a separate bowl, whisk together the oat flour, whole wheat flour, vanilla collagen powder, baking soda, baking powder, salt, and optional cinnamon. 5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. 6. Divide the batter evenly among the muffin cups, filling each about 3/4 full. 7. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. 8.
