Hey guys!

What are your favorite “lazy meals” for when you don’t feel like cooking?

Some of my favorites:

*Lightened-up tacos as in, more black beans and less cheese than the standard, no rice, although I do still use regular tortillas, some salsa. and a huge salad with them.

*Salad with greens, a tablespoon of olive oil, a tablespoon of vinegar, black beans, tomatoes, and strawberries. If anyone is weirded out by the “strawberries” part—yes I’m weird! LOL

*Canned split pea soup is not the healthiest, but it sure is a smarter choice than takeout. I go for the low-sodium kind, which still has too much sodium, but better than even “healthy” takeout, and better than chips.

*Oatmeal for dinner instead of breakfast.

I batch cook so I don't have to cook a lot every day.

Chickpea pasta with stewed tomatoes and sautéed peppers, onions and mushrooms. Oh wait that’s cooking, yeah I really love spending time in the kitchen now. Who would have thought

Tuna. I usually make tuna salad. I also freeze down stuff because I can have many lazy days

On a cut- tuna/mackerels with rice. That’s what I’ve been bringing to work the past couple of days cuz I’ve hadn’t had time to meal prep. And let me tell you, when it comes out of the microwave….. everyone knows 😂

Old_but_not_out, I’ve never loved chickpea pasta, but red lentil pasta was my favorite a few years ago, and I would love to relearn to like it. I also love just chickpeas, as in, whole chickpeas in salads. Yum. And hummus…unfortunately store-bought hummus as opposed to homemade, is not as healthy as you’d think. So much salt. No wonder it’s so tasty lol.

*and don’t forget about Matzoh, the whole-wheat kind, peanut butter, and fruit. I eat Matzoh sometimes as a healthier substitute for bread, since I’m personally far more worried about ingredients than carbs. Some people are more worried about carbs, in which case, Matzoh isn’t any better than bread. If I go for sandwiches on white bread, I go for the kind that is white but doesn’t have sugar—in some countries, they eat white bread but still stay trimmer than Americans, because sugar is even more addictive for some than white flour. I do eat bread because it makes for easy meals, but I mitigate it. Reading ingredients is key if you are still young, still have a high metabolism, so you are still more worried about ingredients than carbs. Also, raw vegetables are amazing when you just don’t feel like cooking vegetables. Vegetables other than salad, are just as important as salad, even if salad is more admired lol.

I'm a big fan of crockpot meals such as stews and soups. There are plenty leftovers to be frozen for days when cooking is not practical...

Chick peas and regular frozen peas thawed, stir fried in olive oil seasoned with cumin, salt and pepper. Sounds odd but is quick and packed with protein, eat hot or cold
