I did some beef, some cheese, and some with cheese and pepperoni. Baked, not fried.

I sometimes make these for Christmas! I use cheese with red pepper and onion or chicken with onion, peas, and potato.

Those sound good Unity! The beef filling also has potato, onion, and tomato. I also have made one with chicken, cheese, and spinach, need to remember to try that flavor again next time.

3 out of 4 kids like them, so that's pretty good! It's hard to please everyone when you have a family of 6.

I raised 5 kids and husband was a picky eater in the most unhealthy way. Then with me on a diet half the time, pleasing everyone was next to impossible. Made two meals most nights. So, I feel ya.

It's a long recipe, I found it in a cookbook, The Joy of Cooking. I adjusted the seasonings some. A lot of work, but very tasty in my opinion. Beef Empanadas dough 3 c. flour 1 ½ t. baking powder 1 t. salt 10 T. butter, cut into small pieces ½ c. lard or shortening, cut into small pieces 11-13 T. ice water Mix the flour, baking powder, and salt in a large bowl. Add the butter and lard or shortening. Cut the fats into the flour mixture using a pastry blender or fork (I just use my hands) until the mixture resembles coarse crumbs. Drizzle ice water over the top. Mix gently with a fork until the flour mixture is dampened enough to gather into a ball. Shape into a flat disk, wrap tightly in plastic, and refrigerate for at least 1 hour. Beef Filling 1 T. vegetable oil 1 medium onion, diced 2 cloves garlic, minced 1 lb Ground beef 1 large tomato, cored and chopped 1 c. diced peeled potatoes (about 1-2 potatoes) 1 t. oregano ½ t. cumin ½ t. salt ½ t. pepper ¼ t. thyme Heat oil in a large nonstick skillet over medium heat. Add onion and garlic, cook stirring, until the onion is translucent, about 5 minutes. Stir in ground beef, cook until beef is lightly browned, about 8 minutes. Stir in add the rest of the ingredients and cook, covered, until potato is tender, about 10 minutes. Uncover the pan, increase heat to medium-high, and cook briefly to evaporate any pan juices. Remove from heat and let cool completely. Preheat oven to 400 Roll out dough 1/8 inch thick. Cut into 6-inch rounds. Spoon about ¼ cup of filling into each round. Moisten the edges of the rounds with water, fold each one in half, and press the edges together to completely enclose the filling. Use the tines of a fork to decoratively seal the edges. Place 2 inches apart on a baking sheet. Mix together and brush over the top of the empanadas 1 large egg, 1 T. milk, and a pinch of salt. Bake until nicely browned, about 15 minutes. Let cool slightly on a rack and serve warm.

Wafflewitz, does your supermarket sell Goya products? I ask because in the frozen aisle, you may find Goya's pastry puff dough. They are each separated with paper. So convenient especially for a larger family💙

I've never thought to look for store bought empanada dough. I know at least some of our local stores carry Goya products, I'll have to look for that.

I realize that the store-bought dough will have more crap in it than the homemade version, but I have made empanada dough from scratch and found the process tedious.
