This was super yummy. Thanks! Rotisserie turkey, sautéed onion, avocado, sweet potato... the glass of red wine happened later..

Brigit_2, I, admittedly, have a minor obsession with sweet potatoes. They cook up faster than Russets in a small toaster oven. This helps in warmer weather conditions when you want a substantial food item but not the heat from cooking. I am not 100% comfortable with my grill yet... I'll get there, but that is another story. Also, sweet potatoes have fewer calories than Russets... and more nutrients (I believe). I literally run them under cool water, dry them off, and throw them in the toaster oven whole. I can cook up 3 or so at a time, eat one, and wrap the others in tin foil for another day. 💙 lol obsessed...
