Ive got to try spaghetti squash again. I didnt care for it the one time I made it, but maybe I didnt cook it well. Looks good here

WindyD, it is, admittedly, not an easy vegetable to work with. But I cut it in half (carefully), discard the seeds, rub olive oil, sprinkle salt, flip it onto the flat side and roast it for 30-40 minutes at 400° The smaller the squash, the less cooking time required. 😁

Looks GREAT! I had spaghetti squash beef spaghetti 🍝 for lunch this work week. (3 days) Tasted great each time, one of my favorites!

I've learned with winter squash that it's a lot safer to poke holes in them, roast them whole, and then cut them up and scoop out the seeds and pulp. I've had one too many close calls with the knife to go back to cutting them up before cooking. Granted, it's a little easier to scoop them out before cooking, but I'll take that trade-off

Writing.... I will absolutely consider trying that again. Cutting those things in half is a nightmare, for sure.
