Thank you Janie. Everything, except the tortillas, were thrown together from the freezer. I love when a meal comes together easily and of course, homemade tortillas make any meal so tasty. 😋

Mer, it is my comfort food, probably because I grew up eating it, even though my mom made a lot of American food. 🤷🏻♀️

Diana, I understand if your husband isn't crazy about it, especially if he usually has restaurant Mexican food. Tradional mexican food is very distinct by region, but most restaurants limit their menus to the most common dishes, mostly from the northern part of Mexico. One of the best Mexican dishes I've eaten was duck enchiladas made with a mole sauce. 😋

That looks so good. I bought costcos tortilla soup a few weeks ago tasted great but had to throw away because the sodium must have been really high. It showed on the scale. Yours looks so yummy

Thank you Storms and Yoh. Yoh, you have to be so careful when buying soup, for exactly the reason you gave. This was homemade, which of course makes it easy to control the ingredients. I just started using nutritional yeast and we're really enjoying it, especially in soups. 😋

Yoh, the n.y. adds a cheese flavor and also adds B12 nutritionally. For me, it's like adding one of those ramen flavor packets, but without the non-nutrients.

Yoh, you're welcome. I had heard of it awhile back, but I think it was MerMee/Cheesegobbler that I saw using it in her salads, so I looked it up. It's basically pasteurized yeast. I use the powder, but it also comes in flakes.
