I really like cajeta (goat’s milk caramel) and make it at Christmas to give to the ones I know that appreciate that unique taste. I was reluctant to try it when I was first introduced to it but I really love it now.

Pixel, it's Delicia's on Lohman. A few family members have recommended it, but this was the first time we tried it. We live 2 hours away, so we don't get to LC too often.  

The dipped spoons are easy to find. The boxes are harder. 

Kenna, those receiving homemade cajeta are so fortunate! You continue to amaze me. 💖 Now I might just try making it. 👍 

Erq, I did pretty good today with not overeating. I did go over my calories for today, but ate real food for the most part. 2 small pancakes and the ½ of a churro were the non-nutritional foods I ate today. I just get so wiped out from going shopping, that's why my toes (along with most of my body) hurt today. I also think something is kicking up allergies, but life is still always good. 👍😊💕 

MM, yes! I love beef tongue. I used to make it a lot when my kids we're young and it wasn't so expensive! It's rare that I make it at home nowadays, but when I find it on the menu I do tend to order it. This time my husband ordered it and since we brought over half of our meals home, we have leftovers for tomorrow and I will be stealing some of my husband's leftovers. When I do make lengua, I usually make it in mole. How do you prepare it when you make it? 

Kat, it's hard to find the Mexican candy that I remember. It's all so commercialized now. My favorites were cajeta and jamoncillo (milk fudge). You would get pieces with wax paper in a bag. Maybe the only places now would be some panaderias or Olvera Street.  

Jamoncillo is VERY easy to make—- just a few ingredients, and it is delicious. I have only had it homemade, not as a commercial product. I have never tried to make tamales, that is a lot of work.

Pixel, we always enjoy Luna Rossa for a light meal, down toward Mesilla. And there's always Double Eagle, in Old Mesilla Plaza, for a special celebration. There are so many good places to eat in Las Cruces, but whereever you go, I hope you have an enjoyable meal. 😊 

I love churros! They are a typical breakfast in Madrid, afternoon snack in Barcelona. 

Eva, these were served to us freshly made, still hot. Well, it looks like when I make my trip to Spain, I will breakfast in Madrid and kunch in Barcelona. 😋😄

Sweetness, if the rice and beans are good, the rest of the nenu is also good. That's been my experience anyway. I'm so apprehensive to try new Mexican restaurants, but there's only been a few that have been disappointing. 😊
