Yum! I found a really good pasta substitute that I tried for dinner tonight. It is called "Organic Adzuki Bean Spaghetti Shape". (Gluten Free) The only ingredients are Organic Adzuki beans, Organic Soybeans, and water. And boy are they a powerhouse of fiber and protein :) For those who watch their carbs it is 26 grams a serving with 15 grams of fiber. So they wont make my blood sugar spike. And protein is 20 grams a serving! I am always on the look out for healthy alternatives to food that I like and pasta is one of my faves :)

Thanks for sharing that - how did it taste, though? Doing low carb, I do miss pasta about once a month or so. I could make it with Alfredo sauce - yum!

I thought it tasted good. It tasted a lot like whole wheat pasta. My husband is a very picky eater and he ate it just fine. We had the same idea as my next batch is going to be chicken Alfredo :)

I'm allergic to adzuki. Discovered it while visiting my son in Japan. We ate something yummy and I felt bad very shortly after. I thought it was my dumping syndrome at first. Then my tongue began to swell. Finally I couldn't get my mouth shut. Fortunately, I had mailed ahead to my son a pack of benadryl just for our visit because it is 'script- only' over there. 50mg later, I was better. The next day, we did a controlled experiment with adzuki bean paste in a bun. Same results. However, we have discovered Dreamfields vermicelli is very low in carbs and doesn't jack up our sugar. It makes a dandy Pasta Primavera.

Dreamfields angelhair pasta contains per serving...190 calories...41grams total carbs... 5grams total fiber (3 is soluable and 2 is insoluable) and 7grams protein. That's the same as Ronco Vermacelli. No big savings there. I wonder if Dreamfields got caught doing false advertising. Anyone know?
