What I learned at veggie fest by Instant Crazy age 41

This was the quote given by the presenter at the Indianapolis veggie fest.

This is a quote for me. I need to take control! I'm definitely going to start.

Tiffany Bright was the presenter I mentioned. She was wonderful to listen to and the smells coming from the food she cooked were amazing! She self published a cookbook, which I now own, yay! She is a yoga instructor, a reiki master, and she has 3 auto immune diseases, plus children with special dietary needs. She uses food to keep everything in check. She definitely looked fit and healthy. It truly is what you put in your body that makes you feel alive or dead. She told us to keep a journal of how we are feeling each day, and make notes of how the foods we eat effect us either by eliminating certain foods, or adding foods back into our diets.

She was definitely a proponent of whole foods, vegan foods, and organic foods. Also she said if we used canned foods to make sure they were bpa free cans. Of course she mentioned not to do all these changes at once, but gradually.

The food she cooked for us was wonderful! The first was a one pot dish with quinoa, onions, peppers, beans, it was so fast and easy too. I learned that you can cook the beans and the quinoa ahead of time, and freeze them. That way you just grab them from the freezer, thaw them, and in about 15 minutes you have a full meal. From googleing how to cook beans, I learned you can cook them in a rice cooker, as well as quinoa. This will make my life so much easier. I also learned that Roger Ebert wrote a book on cooking in a rice cooker, which is odd, but interesting. The other dish she made she called cookie dough. It was a sweet hummus sweetened with agave and chocolate chips. (in my best sing songy voice) WONDERFUL!

I got tons of other vegan recipes just from the booths around the fest. I can't wait to get cooking.

I'm still on a plateau with my weight. I'm hoping this vegan/whole food/healthy change will kick me off the ledge and back into weight loss land.

Love your quotes! I stumbled onto Roger Ebert's journal on the rice cooker last month. Go to rogerebert.com and in the search box (at the top of the page) type in the words The Pot. :)

I love this post. You've given me lots to look up and I will be looking forward to seeing what you cook up. Sweet hummus has gone on my list of things that I must try.

I love the quote from Ann. WOW I wish they had something like that here. Maybe they do and I just don't know about it. Sounds like an interesting time. I cook beans in a pressure cook, relatively fast and easy. There are a lot if grains you can cook in a rice cooker i.ve just learned reading packages at the oriental store, they are starting to carry lots of interesting whole organic grains. Odd thing is, that's one thing I do not have, mmmm. If you figure out the sweet hummus, let us know.

Recipe for cookie dough hummus: 1 1/2 C cooked chickpeas 1/2 C nut or seed butter of choice 1/4 C agave nectar 1/4 C vegan chocolate chips 1-2 T water for thinning Mix all ingredients in food processor until smooth scraping down sides to get all beans pureed. Add water 1 T at time to thin if necessary. Fold in chocolate chips. Serve with sweet potato chips, graham crackers, animal crackers, toast, or on a spoon. Optional add in cinnamon or chili powder. I pulled my rice cooker out of the cabinet. Somehow it got put away dirty. O_O The horror...the HORROR!!!
