I'm on day 2 of Whole 30. I never thought I'd do this. I am learning that my body no longer tolerates certain foods. I removed gluten several months ago after discovering that eating it gives me joint pain, itchiness, and fatigue. It was normal to feel that way so I didn't realize what was happening until I made the changes and felt so much better. I've since discovered dairy makes me congested. I don't want either of these things to be true, but they are for me. I met with a Registered Dietician who advised me to increase my veggies, healthy fats, and protein while lowering starchy carbs. I really, really, really, really, did not want to do this, but I gave it a whirl and feel even better than when I gave up gluten. Yay and boo! So I decided to do the elimination diet and then slowly add in certain foods to see how I feel when I eat them. I am hoping that I don't have negative reactions to grains and legumes, but we shall see. This is not about weight loss, but discovering what foods work for me and what foods do not. My body has given me several medical conditions to inform me that I should change my eating habits, but I have plugged my ears and refused to listen for too long. I'm listening and I'm glad that I really love most vegetables and can still enjoy eating. This is my journey to getting to know my body.
