One of my favorite meals at Fatz Cafe used to be a chicken dish with ziti noodles in a white sauce, encrusted in some kind of breading. When I started WW, I had 39 points a day. THAT DISH ALONE was 39 Points. HELL-OOOOO !!!! No more of THAT!!!

Yeah, wow. There are quite a few "comfort" foods that many of us have enjoyed on the rare occasion, but now we know we simply CAN'T. Thankfully, there are some great recipes out there for making some of those tried-and-true comfort foods MUCH healthier.

Here is a lower fat version of a quiche. Haven't tried it but everything I've tried from this book has been really good. Personally I do tend not to use low fat substitutes. The book is called Looneyspoons. Says it has 5.3 grams of fat and 201 calories per serving. Crust. 1 tbs of low fat mart or low fat butter. 1/2 cup each chopped onions and celery, 1clove minced garlic, 6 cups bread crumbs (whole wheat) , 1/2 teaspoons dried oregano , basil, sage, thyme, and black pepper. 1/4 teaspoon salt, 1/3 cup low sodium low fat chicken stock (or veggie). To prepare crust melt marg in skillet over medium high. Add celery, onions and garlic cook until soft about 4 minutes. Toss bread crumbs, all remaining ingredients except stock together, add veggies and mix. Sprinkle in broth and mix. Spray pan with cooking spray. For filling: 2 cups sliced mushrooms, 1/2 cup chopped onions, 5 ounces of frozen spinach thawed and squeezed dry, 3/4 cup shredded reduced fat sharp cheddar cheese (3ounces) 1/2 cup of sliced red bell peppers, 1cup broccoli flowerets (blanched and drained) 1medium tomato sliced thin, 1 1/2 cups fat free egg substitute. To prepare filling: spray skillet with non stick spray. Add mushrooms and onions, cook and stir over medium heat cook about 5 minutes till tender. Mix in spinach. Layer 1/2 cheese over crust, top with 1/2 the mushroom mix, then the broccoli and sliced peppers, then 1/2 the cheese, then rest of mushroom mix, top with tomato slices. Pour eggs over all. Bake for 45 minutes @ 400degrees. Let cool 5 minutes. I would imagine just like normal quiche you could substitute other ingredients including the cheese.
