I miss having wonton soup. To be honest, I rarely have the "soup", usually I fill up my bowl full of wontons. I found a recipe for keto wrapper-less wontons. I had my Thanksgiving turkey soup stock in my freezer, so we made Naked Wonton soup. I also made a salad to go with it.

The soup base was phenomenal, the wontons need more flavour. I think next time I'll add some coconut aminos and rice wine vinegar to them. But it satisfied my craving, and I'm shockingly FULL!

I am not sure why the meatballs were baked rather than cooked in the stock... what do yout think?

Thanks for the link. I have all those ingredients on hand, will try it very soon! Thanks for the suggestions of coconut aminos and rice wine vinegar too.

@Liv, I don't know, but I did learn that I should have turned them midway. Guess I should read the entire directions and not assume anything. It didn't change the taste, it just looks weird that one side is darker than the other, lol. I will say that the meatballs the next day had soaked up the flavours from the stock and tasted much better.

I am going to try this and cook in the stock and see how it goes. I will report back. For now we are going crazy with the new airfryer but as soon as that excitement is over I am making this soup.

Haha, I'm glad I'm not the only one that goes in phases. My dash almost blew up after the first month... and hubby said ENOUGH CHAFFLES!
