Just got daughter's covid test & it's negative. So it's back to normal routine tomorrow... thank God 🙏
My son & I cooked up keto Tex-Mex Casserole for dinner, which I got from dietdoctor.com - it was so good. I'm still licking my lips. My son is stuffed to the gills & believe me, it's really hard to fill that boy.
We cooked the recipe for 4 people, so we'll have the rest for lunch tomorrow. We served it with iceberg lettuce salad, chopped cucumber & green bell pepper. I mashed 1 avocado with finely chopped garlic clove, a good squeeze of lime, salt & a little pinch of mint. Plus we had a good table spoon of sour cream on top as I was generous with the jalapenos 😂 Also, I swapped out the tex-mex seasoning for fajita seasoning because we both love that one & I didn't have any tex-mex anyhow 🙈
The left over 2 portions are for our lunch tomorrow. He's taking his into school with him.
