Chicken enchiladas made with Mission carb balance street taco tortillas! This was the first time I have used these to make enchiladas and they turned out bomb! :)

GibJig, I know right?! I was so happy that they turned out so yummy! Definitely will be using them again the next time I make enchiladas.😋 Thank you Lana! They really were and a healthy alternative to regular tortillas. The whole family got some extra fiber in too lol😊
