@melissa: Never ate quinoa or other grains besides white rice growing up. I really like all the variety and quinoa has great texture, flavor and is healthier too!

#1: Orwell was correct. All pork isn't equal. Or atleast some pork is more equal than others. 😉 These chops come heirloom breads that the small local produces finishes on hazelnuts. Might be more expensive but worth it!
#2: Pork is often overcooked and it dries out resulting in nothing. I cook pork no more than 140 F. For this, I seared in cast iron pan and finished in oven 335F
#3: I often brine my chops in salt, sugar, garlic powder solution. Brined chops are a bit more forgiving during the cook.
