Looks wonderful, Paula. AS a WFPB person, I love to see what you eat. I do not use white rice, rather long grain brown jasmine. Love it. InstaPot works great for that. I put a little red quinoa in it, too. I have a great gluten free bread recipe but eat too much if I make it, so rarely do! My black beans I cook in the IP also. Even corn spaghetti, IP does it. Keep up the good work.

Delgadalahna, I mix white rice and Brown rice together. I just have never liked the flavor of Brown rice alone. I will try adding a little quinoa! What is corn spaghetti?

First, brown jasmine rice is much tastier than brown rice. White has no fiber plus has a higher glycemic index (meaning will increase blood glucose more); so quinoa is a good addition. I use 2 cups of the jasmine rice (rinsed well), then add 1/2 cup red quinoa..or any quinoa, red is prettier. In the IP, you just add 2.5 cups water, seal, manual pressure 20", natural release 7", then quick release. Perfect. I freeze some of it. Corn spaghetti is just made from corn. It is harder to find now but we have eaten it for years. I am gluten intolerant, but hubby prefers the taste of it to the wheat! BTW, if you have not heard of Dr Greger, his blog is nutritionfacts.org. His new book (havent read yet but going to hear him in Tucson this Sunday) is HOW NOT TO DIET. His first one was HOW NOT TO DIE. Great, smart, entertaining guy.
