I've been working on a meal plan for the past week or two. It would be so much easier if I could keep it as simple as my fiance does. Meat, carbs, and veggies. Cook it separately, toss it in a container, freeze it, and you have a month's worth of food ready. I can't do that simple. Everything I eat has to be baby friendly, not too bland, not lacking in variety, but also not to complex. I need to keep net carbs low. I can't have eggs for breakfast. Even if bananas weren't high carb I can't even touch them. I have to be extra cautious if I add in nuts because of family allergies. Oranges and grapefruit require caution as well. Anti inflammatory is a requirement at this point. High protein is a must. I can't work in a fourth meal, but I might be able to sneak in a snack or two. In addition to all of that it needs to be relatively light and easy on my stomach. And it all has to be kept somewhat cheap. It's all these small parameters that screw me up.
So I've been going around and around trying to figure it out. My biggest downfall has been breakfast. I want something at least somewhat breakfasty. But I can't figure out anything within that that really seems like breakfast. Past that it's the calories. I can barely eat a 300 calorie meal right now without feeling like I'm gonna explode. It's so much food! It's a lot of meat. I have a list of foods printed off with calories, carbs, protein, fat, and fiber count. Everything will be weighed out and portioned. It's a lot of tedious work.
I have until tomorrow to figure it out and make a grocery list between naps, cleaning, the random eruptions of screaming, the meltdowns of a teething child, feeding him, etc. I still can't get the calorie count up to 1900. I can live with it being slightly under. But in order to get over 1500 it requires going a little over budget. And that's with 1-2 added snacks and a protein shake. Neither of which will be available for a while. I guess 1500 is better than the average 700 I had been able to swing lately.
This time better than last, next time even better. Every little bit of progress is still a step forward. And in order to get where I need and want to be I have to have forward thinking. No more excuses. No skipping meals to save money or time. This is it! Mommas get this shit together.

Can you have dairy? What about toast for breakfast? I just bought some bread that has 6 grams of protein, 80 calories and 15 grams carbs. I use it for toast, sometimes with a little butter, sometimes a tablespoon of peanut butter. I have string cheese for a snack for the protein. I had 1/4 to 1/2 bagel for months for breakfast.

I can have dairy. But I'm trying to limit how much. Ive considered something along the lines of Ezekiel bread/bagels. But if I do that the calorie count is too low, and the carbs are harder to spread out. This is why people pay nutritionists and dieticians. It's a lot of work, and so many ins and outs to consider.

So you need to take in 1900 calories? Forget the 1/4 bagel I mentioned. You could have the whole bagel. For me, 60 calories in 1/4 bagel with 1 tablespoon light cream cheese was very satisfying. But my calorie goal is much less, almost half of yours.

Yeah! I think eating as much as I have been for the last few months kinda screwed up my hormones a bit. So while 1900 may seem high I'm not aiming to lose weight too quickly. It's gotta be a lifestyle change, something that I can keep consistent later on. 1900 is ideal for me. While I could eat a whole bagel it ends up being a lot of carbs. Haha!

@keyten, I try to avoid soy for the most part. But I would love to make some kimchi. I haven't tried stew or soups for breakfast yet. Although that's primarily because freezing it requires different containers than we have at the moment. At some point we're planning on getting a food saver, and that will open up the possibility of soups, stews, and a lot of other options. We're unfortunately limited right now. Awesome job! It's a lot of hard work. But working in the kitchen can be a lot of fun. I love cooking! If I had more time to work with I'd probably be in the kitchen 90% of my day just dancing around and cooking. There are so many possibilities if you get creative.

If you can't have eggs for breakfast and want to stay low carb, I can suggest greek yogurt, cottage cheese, sausage w/peppers & onions, all paired with a low carb fruit (berries, star fruit). Other low carb ideas for breakfast would be to find recipes for homemade breads or biscuits. There are also plenty of low carb wraps and pitas on the market.

And, you'll get into a groove for meal prep. It took me a minute, but its all routine now and doesn't take a lot of time.

@kissangel, I wanted to do cottage cheese and yogurt for breakfast, actually. But I have to keep dairy to a minimum, unfortunately. I've tried my hand at a few eggless low carb breads. But they never turn out right. Thanks for the ideas though! I'm sure I'll figure it out eventually. With all the food allergies in the house it's a difficult challenge. I love the cooking end. It's just this part that drains me so bad. @tatauu, thanks! Breastfeeding kinda sucked the creativity out of me. Hahaha! I need to get back to painting or dancing. Get the creative juices flowing.

Have you tried Kodiak Power pancakes or waffles? I've heard they are really good, low carb and higher protein. They are on my list of things to try.

@UK cats, no. I usually try to make everything at home. Even noodles! But I do actually want to try them. Even if it is just to get a taste to make a knock off recipe. Hahaha!

Ruthe, never heard of him. But I don't do well with strictly keto. I love carbs! While it's a mindset change it also needs to be a lifestyle change. If I'm just going to keep falling into the same pitfalls of overdoing the carbs based off a keto diet its not going to fit very well. If it works well for you or someone else that's awesome. More power to you! For me, lowish carbs/high protein macros seem to work best.

currinuh, I put individual portions into sandwich bags, then put those into a freezer bag. So no special containers needed, just empty the frozen stuff into a pan or microwave dish and reheat.

Have you tried paleo? It's not as strict on carbs as keto. I like it

I have no recommend. just lots of encouragement and empathy. ok one recommend... carb smart street taco whole wheat tortillas...AND they are good. stir fry your "go to veggies, some seasoning salt you like, a tsp of eco and turkey sausage, thin sliced chicken breast, or fish, and its breakfast. Add a bit of cheese to bump up the cal. if you need to. Good luck to you. I believe in you!!!

I'm free styling, using the tools recommended by FS, but alt. a "fat" day or two of between 1350 and 1600, then one day of 500-750 cal. I check my car. intake frequently, and keep it below the 50%. My RDI is 1800, but I cannot lose wt on that. I'm pretty consistently losing now (since June 1), don't feel hungry or crave anything very often. I too have lots of dietary limitations, but not as many as you. Wishing you good luck, and have faith YOU CAN DO THIS!!!

@Gz9, even with soups and stews? I've always ended up with leakage issues. What brand of bags are you using? @tatauu, I'm more or less doing paleo. My target net carbs is 95g per day. If I'm a few grams over or under that's fine. But anything less than that I'd probably lose it and binge. Lol! @sassy, ya know, I never thought of stir fry as a breakfast option. But that's not a bad idea. Sounds like you've come a long way. Good job getting to where you are, and good luck with the rest of your journey. Thanks for the encouragement!
