Cooking healthy for my diabetic husband is proving to be quite the challenge, mainly since he tends to be a picky eater. He claims he is not, however, as the person who does the cooking, I maintain that he is, lol. We were talking tonight about options and I was looking at my Pinterest boards for some keto recipes. He isn't willing to substitute something for pasta, would rather just not eat pasta. But I found a recipe that uses zucchini instead of noodles that sounds quite good. Based on the recipe alone and not thinking about the zoodles as a replacement, he agreed he would at least try it. He is not willing to eat spaghetti squash like I do tho, with my homemade spaghetti meat sauce on it. He's not a huge fish eater (I LOVE fish!). He's not really crazy about pork chops either, but he eats them. I think the biggest struggle is going to be finding things for him that are simple for him to fix (he is not a cook and doesn't like to have to prepare much, other than a sandwich) for both breakfast (he's not a huge fan of eggs) and lunch when he's at home and I'm working. I already spend too much time in the kitchen dealing with portable breakfast and lunch dishes for myself, now I'm going to have to figure out his. If he liked what I like, wouldn't be as big a deal. I also have to consider that he is going to require 500 more calories a day than I do. I figured out his BMR and what he needs to keep his caloric intake to for a day to lose weight. He looked at me and whispered "Thank you for taking care of me and doing this for me." I do it because I love him. Things that are worth it are rarely easy. He will have to do his own logging, tho!

You know this is him being exceptionally lazy and taking advantage .. with all the extra time you are devoting to him (and his special requirements) you could be training and getting fit instead. Why don't you encourage him to share the burden and get him to learn 5/7 meals that he likes to eat and can make simply?? Then two days out of the week.. he can give you a break from preparation burdens so you can exercise or do activities? I did this with my ex . There were four or five meals he really loved and I taught him how to make them with my help. He then managed to prepare and make meals two or three days out of the week .. it saved me from rushing home to do homemade meals all week ... and I could go to the gym or work late when it was his day in charge of the kitchen!!! He began to really love cooking and I found him some great sites with healthy recipes to learn! Get him on it girl x

My husband works an extremely demanding job and I work part time. He often doesn't come up from his home office for supper until 8p. I like to cook, he doesn't and truly does not have the time to do it. I have gotten quite fit over the past few months, working out in the morning on my days off. I don't have the inclination to do it after work because I'm on my feet all day (when we're busy) and if we aren't busy, I go borrow some weights from the PT Dept and get a modified workout at work. This is learning a new way of eating for him and I am more than happy to help him as he always helps me when I need it.

I help my husband, too LSG417. He's pre-diabetic and has lost 30 pounds by me helping him make positive diet changes and going to the gym 2-3 times a week. He walks in the pool there for about an hour and takes an aqua-cise class once a week. Since my knees went out he has also been doing the morning walk with our dog, which has been good for both of them. I see no harm in helping as long as it's not enabling :) Hubby was 41 when we got married and was already able to feed himself. I have just been helping him make some better choices.

I figure we do best when we are willing to help each other. He does so much for me and he let's me know he appreciates my help. He's just beginning, so it will take more guidance and help from me. Once he adjusts to a new way of eating, he will be able to "stand on his own", so to speak. Health and fitness have been my thing for a long time. I just had a setback 6 years ago when my first hubby died and it has taken awhile to get back to who I really am. I have often thought about being a nutritionist or fitness coach or something like that as a career. Just never made it there. But taking care of my family fulfills me. I'm just glad he's finally on board!
