Got a lovely spatchcock chicken coated in Mediterranean herbs and spices cooking in my oven at the moment ... and the smell is wonderful! Very appetizing and making my mouth water. Going to make a potato salad (of which ill have just a very little as a treat as its sunday but dont want to eat too many carbs!) and some steamed veggies.

My spatchcocked Chicken is sitting in olive oil and a garam masala heavy in nutmeg. I couldn’t face having the oven on today for the length of time it would take to roast in the usual way. Yours sounds fantastic 🤤 Enjoy!!

Yes I was debating doing mine on the barbeque cos it's so hot today. Yours sounds lovely as well Phooka.
