Like I said in my profile, I cook everyday. Since starting Intermittent Fasting, I try to make myself a beautiful late lunch on my days off. Today I had some shrimp and a small chicken breast that I had to use, so the easiest thing was to turn them into salads for my lunches this week. Ziploc Zip ‘N Steam bags are GREAT for cooking chicken, seafood and even an omelette in the microwave. This is a Chutney Chicken Salad-you could add a pinch of Curry powder also. Absolutely delicious that way. The other is a very basic Shrimp Salad that I used in a Composed Salad for lunch today. When WHAT you are eating is the focus of your day, I think HOW you are eating it should be too. You’ll enjoy your food more when it is presented nicely, on a real plate, (not paper), seated at a nice table with a healthy beverage with TIME to enjoy your meal. I can’t always do that, but I try everyday. Hope you find time to be good to yourself today.
