Okay, today is the first day (in the month that I have been doing a food log) that I can't possibly input what I ate for dinner...It was the monthly Vegetarian Society potluck, and I couldn't even attempt to log exactly what I ate. All I know, is it was GOOD and I am FULL. The awesome thing about being vegan is that, as long as I'm not gorging on dessert, I know that everything on my plate was good for me, and I don't need to worry about the calories. I had german potato salad, pesto pasta, vegan lasagne (with Daiya cheese - it was delicious), enchiladas, vietnamese spring rolls, Indian pilaf, the Sunflower Zucchini bread that I made, a brownie, strawberry pie...ya I think that was about it. The lady sitting next to me was like, "Wow, you really know how to pack it away," and I responded, "You have NO idea." To me, food is a celebration - when I know everything available is vegan, I just go for it with reckless abandon. And since I don't do that every day, I can get away with it.
